Dark Chocolate and Peanut Butter Chip Cookies from Scratch

Helloooo, and welcome post number five in my six-part Blogtober mini-series.  I have enjoyed doing these posts so far, and can’t wait to keep it up.  If you have read my previous posts, you know that my husband Evan and I were doing the keto diet.  I say were, because I gave up on it; I love bread and carbs waaay too much.  Evan, however, has kept going, and has been great! This weekend he had a cheat day and requested some of my homemade cookies from scratch.  So, I made them! And now, I’m sharing the recipe I use for my cookies every year (mainly for holidays).

This recipe is really simple, and always yields great results!  For the most part, these are ingredients that *most* people would have in their stash.  This time I made dark chocolate and peanut butter chip cookies that were amazing!  The ingredients you would need are as follows:

  • 2 1/4 cups of flour (all -purpose)
  • Softened butter (A stick and a half)
  • 2 eggs
  • a teaspoon of vanilla
  • a teaspoon of baking soda (don’t overdo this part)
  • a cup of brown sugar
  • half a cup of granulated sugar
  • a teaspoon of salt
  • 12-oz bag of dark chocolate chips and a 10-oz bag of peanut butter chips (only half of each bag will be used so you can make two batches)

I always start with two mixing bowls –

Bowl 1:

Mix the softened butter, granulated sugar, and brown sugar together. Once mixed add in the eggs and vanilla and mix together.


Bowl 2: 

Mix the flour, baking soda, and salt.  Ensure any clumps are crushed and all is mixed well.


Once this is done, slowly add the ingredients from bowl 1 in.  Personally, I prefer to hand mix and have Evan help.  I stir slow and ensure I stir in circles, adding the liquid materials in slowly.  This ensures it is mixed well for the best cookie dough!  Next, add in your chocolate and peanut butter chips.


After the dough is mixed, form into cookie dough balls and place on non-stick baking sheet.  I usually spray my non-stick pans to prevent sticking, but it is personal preference.  To form the cookie dough balls, I use a tablespoon and shape it on the cookie sheet. Once on the baking sheet, bake on 350 degrees until cooked to the desired temperature, or until brown around the edges.  I bake mine between 12-15 minutes, checking often.


Once the cookies are done, ENJOY! If you want to be like Evan, you can enjoy them like the Rock does, with two large cookies with peanut butter in the middle, making a cookie sandwich.  Actually, that is why Evan requested the chocolate and peanut butter chip cookies.  These cookies are sooooo good!
